Gingerbread Men:
Ingredients: • 100g butter, softened • 100g caster sugar • 1 egg • 175g plain flour • 1 tsp baking powder • 1 tsp ground ginger To Decorate: • Icing sugar, for dusting • 50g melted chocolate • Sprinkles, red and green optional Method:1. Preheat oven to 190C/170C fan/Gas 5. Line 2 baking sheets with parchment paper.2. In a bowl mix together the butter and sugar until light and fluffy. Beat in the egg until well combined. Sift in the flour, baking powder and ground ginger. Mix together to form a dough.3. On a lightly floured surface, roll out the dough to approx 5mm thickness. Cut into shapes with a cookie cutter dipped in flour (if the dough becomes sticky, pop it into the fridge for 10 mins). Place onto prepared baking sheets and bake for 10-12 minutes until golden brown. Leave to cool on wire racks before decorating with icing sugar, melted chocolate and sprinkles (if using). Enjoy!
Classic Candy Canes: Ingredients: • 360g granulated sugar • 120ml water • red food colouring Method: 1) Put the sugar and water into a heavy-based saucepan over medium heat and stir gently until the sugar has dissolved completely. Turn up the heat and bring to the boil without stirring – this will take about 8 minutes so be patient! 2) Once boiling point is reached, turn down the heat slightly and attach a candy thermometer to the side of the pan (if you don't have one, don't worry – just keep a close eye on things). 3) Allow the mixture to boil gently until it reaches 155 degrees Celsius (or 309 degrees Fahrenheit), then take it off the heat immediately (otherwise it will start to caramelise). 4) Add enough food colouring so that your candy cane mixture turns a nice bright red – I used around 10 drops but it will depend on how vivid you want your stripes! 5) Pour mixture into 2 trays or containers lined with baking paper (makes it easier to remove later) and leave to set overnight. Once set, cut into thin strips using scissors then store in an airtight container. Enjoy!
Winter Wonderland Cake:Ingredients For The Cake: • 225g unsalted butter, at room temperature • 225g caster sugar • 4 large eggs • 225g plain flour • 1 teaspoon baking powder • ½ teaspoon bicarbonate of soda • Pinch of salt • Zests of 2 lemons For The Frosting And Decoration: • 250g unsalted butter, at room temperature • 500g icing sugar mixture • 9 tablespoons full-fat cream cheese • Food colourings of your choice – I used white, silver metallic gel paste, pink gel paste Method:1) Preheat oven to 180C/160C fan/gas mark 4. Grease 3 x 20cm round cake tins with butter then line base with baking paper.2) In a large bowl or in your electric mixer fitted with whisk attachment beat together butter and sugar until creamy and lightened in colour – this will take around 5 minutes if using an electric mixer3) Add eggs one at a time making sure each is well incorporated before adding next then add lemon zests4) Sift together flour, baking powder, bicarbonate of soda and salt5) With mixer on low speed add one third of dry ingredients followed by half of wet ingredients then repeat ending with dry ingredients6) Divide mixture evenly between prepared cake tins levelling top with back of spoon then bake for 25-30 minutes until light golden brown and springy to touch7) Remove from oven tins and cool on wire racks completely before frosting8 ) To make frosting beat together butter andicing sugar mixture for several minutes until very smooth9) Add cream cheese one tablespoon at a time till desired consistency is reached10 ) Tint frosting different colours as desired using food colourings11 ) Frost cake layers using offset spatula starting from centre working outwards till entire cake is covered Notes * Cake will keep in fridge for 3 days or freeze well wrapped up for up to 2 months
